Hi, I’m Eric. My love for Texas BBQ started back in 1997 with a chopped brisket sandwich in Austin. Over the years, that love turned into a real passion for learning how to make barbecue the traditional way—low and slow over a wood fire. In 2016, I got my first offset smoker, and I’ve been cooking ever since.
